An old favorite!!!
ingredients:
broccoli flowerettes (about 1#) * 2-3 boneless, skinless chicken breast, cut into strips * 4 garlic cloves, pressed (more to taste) * Olive Oil * 1/2 # Angel Hair pasta * OPTIONAL: * parsley flakes * lemon pepper * Soy Sauce * Parmesan cheese * hot chili paste
Heat a large stir fry skillett over med-high heat. Drizzle olive oil in bottom of pan and add chicken with garlic. (Here you can also add optional parsley and/or lemon pepper) Stir-fry until no long pink in center. Add broccoli and stir fry until crisp-tender. Add more galic when you add the broccoli, of you’re a garlic-loving kinda person!
Meanwhile cook pasta according to package directions. Toss pasta with a liberal amount of olive oil. Transfer to a large pasta bowl and top with chicken & broccoli.
On the table, have available some fresh parmesan and a grater for it, soy sauce and hot chili paste (for the heat-loving part of your family… to get the flavor into the food better, you can add the chili paste to the chicken & broccoli and stir fry it some more… but make sure you take out the portion for the non-heat-loving family members, first!) I like mine with parmesan grated over the top and a little soy sauce drizzled over that.
It’s fast and easy, total of about 15-20 minutes.
Serve with Garlic Toast (or Garlic Cheese Bread) and salad.
