Chinese BBQ Pork
1# boneless pork loin – cut in 6"x2" strips
2 Tbl honey
3 Tbl lite soy sauce
2 Tbl Hoisin sauce
2 Tbl ketchup
1 Tbl dark soy sauce
1 Tbl sherry or sweet wine
1 clove garlic, minced
1 Tbl sugar
1 tsp red food coloring
Mix sauce well. Place sauce and pork in a large zipper top bag. Place this bag inside another large zipper top bag (to help keep leaks from making a mess in your fridge!). Marinate the meat for 24-48 hours, turning occasionally to coat the meat.
Place meat on a rack in large roasting pan. Cover bottom of pan with 1" water. Bake in 425* oven for 20 minutes. Lower heat to 325*, bake 30 minutes. Baste with additional sauce every 5 minutes.
